Butter Pecan Bread
with
Pecan Caramel Sauce
This has been a pretty good year for our few pecan trees.
My husband has been diligently shelling these delicious nuggets
since late November, over 100 lbs. from just a couple trees.
While shelling, my husband made a comment, 'with all
these pecans I am shelling you'd think that someone would
make something with them for me...'
That someone being me.
Well, I knew what he was thinking - Pecan Pie.
I wanted to make a pie, but didn't have all the necessary
ingredients on hand. What's a girl to do?!
I looked up Pecan recipes - very interesting ones out there.
Then I thought - a quick bread. I found this recipe
Butter Pecan Bread
- 2 1/4 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup light brown sugar, packed
- 1 egg, beaten
- 1 cup buttermilk
- 2 tablespoons melted butter
- Sift together the flour, baking powder, soda, salt, and spices; blend in brown sugar.
- Combine egg, buttermilk, and butter; add to flour mixture, stirring to blend well.
- Stir in chopped nuts. Turn batter into a greased and floured 9x5x3-inch loaf pan.
- Bake at 350° for 45 to 50 minutes, or until a wooden pick or cake tester
- inserted in center comes out clean.
As the bread was nearly done, I thought - this needs a little more, an
Emeril 'BAM'.
So I made - without measuring - a caramel sauce.
In a small saucepan I placed about 1/4 c butter,
1/2 c. light brown sugar about 1/4 c. heavy whipping cream
and a dash or two of vanilla. Brought it to a boil for a
few minutes then added pecans.
I served my Dearest this bread - he looks at it and said,
'What's this?!' I just smiled and handed it to him -
he quietly ate it all. A little while later he commented,
'you're really trying to hurt me with that second piece of
cake you're giving me'....
I looked at him, smiled - cut another piece and thought.
My Dear, you'd better work out hard in the morning!
