Derby, Derby, Derby

I have lived in Kentucky almost my whole life, and believe it or not, I've only been to the Derby once. When I was four months pregnant!  I had an unbelievable time, despite my condition, and it just so happens that I'm the only one in our group that remembers all the details of the day.

My fun loving husband didn't make the cut for the photo above and I didn't want to leave him 
out of this derby post, so here he is after the derby modeling my hat and purse. Isn't he cute?  


We are not going to the derby this year, but if we were I would love to wear this dress.

We will be attending a derby party at a neighbor's house and, of course, we will be wearing derby attire.  Here we are last year on our way to the party.  


And yes, I'll be wearing the same hat, again!  It's the only one I own.  

Kentucky Bourbon Chocolate Walnut Pie  (AKA Derby Pie)
Ingredients:
  • 1/2 cup flour
  • 1 cup sugar
  • 2 eggs, beaten
  • 1/2 cup melted butter
  • 2 tablespoons Kentucky bourbon
  • 1 cup chopped walnuts
  • 1 1/4 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 ready-made piecrust
Preparation:
Preheat oven to 350 degrees F.

Combine flour and sugar in a mixing bowl. Add the eggs and butter; mix to combine. Stir in the bourbon, walnuts, chocolate chips, vanilla, and salt. Pour the mixture into the unbaked piecrust. Bake for 40 to 45 minutes. Let cool before slicing.
