So you may have heard me mention before that The Oldest is in Kindergarten this year (as she tells people - she is an Almost First Grader). Anyways, as the school year is coming to an end that also means the beginning of teacher gifts. Fortunatly for me, there is a wonderful mom in her class who has organized group gifts - first for the Holiday's and now for the end of the year. Part of the gift is a classroom cookbook where each family submits a recipe and a picture of their Kindergartner to be bound together in a cookbook for their teacher.
This seems like a simple enough of a task but I found it very stressful. I have a ton of recipes and fretted over which one to submit - I mean, I don't know what kind of food this woman likes or what kind of recipe she wanted. Is she a Fast Fixes with Mixes kind of woman or a reader of Bon Appetit Magazine?
Finally I remembered the no fail recipe that always seems to win over a crowd and now I am going to share it with you:
APPLE PIE PARTY DIP
Ingredients for dip:
1 1/3 cups peeled, cored, and diced apple
1 teaspoon fresh lemon juice
2 teaspoons brown sugar
2 teaspoons apricot preserves
1/8 teaspoon cinnamon
Ingredients for chips:
5 (6-inch) flour tortillas
2 tablespoons butter, melted
1/2 teaspoon cinnamon
1 1/2 tablespoons sugar
Combine all dip ingredients in a bowl, then cover and refrigerate the mixture until chilled.
Brush the tortillas with better, then cute them into wedges. Arrange the wedges on a greased baking sheet, sprinkle with cinnamon and sugar, and bake at 350 degrees until golden brown, about 10 minutes. Let them cool before serving. Serves 4 to 6.
